About Me
^That's me. I'm Lindsie. I'm a daughter, a student, and a career woman. I'm also an advocate for speech and press rights, animal rights, food labeling, natural foods, marriage equality, and equity across socioeconomic class.
I believe that eating on a budget doesn't have to mean eating unhealthy or blah foods. I'm committed to showing how I create tasty and healthy meals on just over $3/day per person. It's possible. I promise.
I'm a vegan, but I haven't always been. I went from a mostly-veggie omnivore to a pescetarian to a vegetarian to a vegan. I also don't (usually) eat soy, and I try to limit my consumption of gluten.
My addictions include coffee (almond milk lattes!), yoga, fresh-squeezed juice, non-fiction writing, Bones, court cases (nerdy, I know), and cooking.
In short, I'm a feminist Christian Universalist who tends to lean toward Marxist social philosophy and believes in good and healthy food for all.
