This soup from Oh She Glows is exactly the type of dish I look for: protein-packed, vegan, and cheap to make.
The flavors in this dish are perfect: a little sweet from the yam, savory from the quinoa and black beans, and just enough spicy to make my lips tingle. :)
Anyway, I only made a couple of modifications, so I won't copy the whole recipe. I added the black beans and spinach at the same time as the spices instead of waiting. I also added some cilantro to the soup while it simmered.
